Amarone Della Valpolicella D.O.C.: is an important wine, potent and vigorous, while soft and velvety.
Description: the colour is clear granate red with ruby hues, so thick in the glass that it is almost impenetrable to light. The aroma is very intense and intricate, depicting a complex and sophisticated scent. Several flavours appear: pansy, cherry jam, fruit under spirit; then minerality and dry spices (vanilla, licorice and black pepper). In the mouth this Amarone is dry, warm and soft, but it retains some freshness and an elegant tannic/savoury note. This is a well balanced wine, whose finest aroma is intense and persistent. The body is strong, and it contributes to define the incredible harmony of this Amarone.
Origins: Amarone della Valpolicella D.O.C. comes from vines located in Tregnago, Illasi, Mezzane and Grezzana. Vines are pruned with Guyot method, and density of 8000 branches/ha.
Grape: Corvina Corvinone 70%, Rondinella 20%, Oseleta and Croatina 10%.
Production: 30hl.
Harvest: 1st week of october, by hand-picking, with a rigorous ripeness selection of the clusters. Then grape dries in 5/6 kg plateaux for 100/120 gg at controlled temperature.
Winemaking and curing: grapes are destemmed and pressed starting from mid january, then they undergo cold maceration, then controlled fermentation for 20/30 gg, with several must repumping / delestage (between18° and 25°), then ageing starts in 350 lt oak tuns for approx 30 months, and finally approx 8/10 months in bottle.
Alcohol content: 16,50 % vol.
