Young wine characterized by its bright and clear straw yellow, enhanced by its fine and persistent perlage. Its aroma immediately echoes acacia flowers, date and loquat with apple and pear notes. It’s lightly palatable, fresh and nice for its light sapidity. It is a versatile wine, ideal for aperitifs, shellfish, savoury meat courses, quiches and vegetables. Excellent with home-baked cookies.

Production area: Valdobbiadene, Vittorio Veneto Terreno: Calcareo, argilloso

Grape strain: Glera (a.k.a. Prosecco)100%

Harvesting: hand-picking, with careful selection of the grapes.

Winemaking: soft-pressing with hydraulic membrane pumps, static decantation of the must, temperature-controlled fermentation (18°C) with selected leavenings. Ageing on fine lees in steel vats for approx. three months.   In-bottle secondary fermentation: italian method, with selected leavenings, temperature-controlled refermentation (14-15°C). Col tartaric stabilization (4°),  micro-filtration of the yeasts before bottling.   Process duration is approx 65 dats.

Colour: Straw yellow with green hues, thick and compact foam, fine and persistent perlage.

Aroma: wide, very intense, with a distinctive golden apple note and Williams pear notes, candied orange, final floral and balsamic echoes (jasmin and almond).

Tasting : sweet, creamy and intense. A very pleasant and bold tasting experience, that somehow wraps the palate in a white ripe fruits taste, very well balanced by its distinctive minerality.

Best served with: this lively wine is the perfect drink during party time. It is excellent when enjoyed with courses like fresh fruit skewers.  Great when closing a dinner, it is well matched with cookies.
