Soave D.O.C.: a young white wine based on the peculiar aromas of the varieties. It can be easily enjoyed in any moment of the day.
Description: a crystal clear wine, color is straw yellow. Taste is quite intense and intricate; in the nose its aroma is floral and fruity (apple and peach notes), with good minerality. This is a well balaced wine, with an intense and persistent flavour, very elegant. This is a poised wine, very harmonic.
Origins: Valpolicella D.O.C. comes from 25/30 years old pergola vines located Mezzane, and Illasi at an elevation of 200 mt a.s.l. Density of the vines is 4500 branches/ha. Soil is a medium grained alluvial calcareous clay.
Varieties: Garganega 80%, Trebbiano di Soave 20%.
Production: 60hl.
Grape harvest, winemaking and ageing: grapes are harvested in 1/4 ton bins at the end of september, and they are immediately destemmed and pressed. Then they undergo static decantation and temperature controlled fermentation at 15-16°c for 15 days.
Alcohol content: 12,50 % vol.
