WINEMAKING:
Grapes are destemmed and soft-pessed.  Then they undergo temperature-controlled fermentation in stainless steel containers. Wine is bottled in February.
TASTING ANALYSIS:
The volcanic terroir shapes the character of this Soave white, making it as intricate and elegant, as rarely to be found.   The La Capelina Soave is solid, with a pleasant freshness and minerality (flint), with citrus and floral notes (noticeably citron, lily, apricot, elderflower).  At the palate, this is a persistent wine.
COMBINATIONS:
Excellent with seafood main courses, as well as with local dishes of the Veneto region like risi e bisi (fresh peas risotto), pumpkin risotto. It combines equally well also with savoury salames like Sopressa, and with fresh or mildly aged cheeses like Monte Veronese DOP mezzano.  It may also be the right choice for not too elaborate white meat courses.
